The new arrival at Tenuta Crodarossa is a nuance of the Solaris grapevine that once again speaks of the Valbelluna.
It does so also in its name, which tells us of the vine-covered hill that is crossed, at a run, by a family of hares every morning.

We like to imagine this IGT Veneto white wine from naturally resistant Solaris grapes around a table full of smiles.
Accompanied by lots of chit-chat, an alveolar loaf of bread and a thickly sliced traditional Veneto salami, with ‘Col del Jevero’ happiness is just a sip away.
Vinification: after destemming, a 12-hour cold maceration on the skins follows, followed by soft pressing and the must obtained is decanted cold for 24 hours.
The clear part is poured into steel vats where fermentation begins and is completed very slowly at low temperatures for 10 to 15 days.
At the end of alcoholic fermentation, racking is performed and the resulting wine undergoes two batonages a week until spring when it is allowed to clarify by cold static decantation and is bottled.
Maturation: in steel vats on the fece nobile for 5 months.

Organoleptic characteristics: Straw-yellow colour with greenish highlights.
The nose captures aromas of white flowers, with notes of peach, mango, pineapple, all surrounded by fresh nuances of wild herbs.

Serving temperature: 10-12°C
Food pairings: ideal accompaniment for hors d’oeuvres, light first courses and excellent with white meat, fish, and shellfish. Also suitable in combination with Asian dishes.
